Soak porcini mushrooms in warm water for 30 minutes until the water is brown with a lot of aroma.
Fry the onion, garlic, shallot and spices. Add a little of the vegetable stock to the pan.
Add the portobello mushrooms until they are cooked. Add porcini mushrooms with everything and water.
Add the remaining broth until it boils. After it starts to boil, reduce the temperature and let it cook for 15 minutes.
Strain the mixture over a bowl. Return the melted mixture to the pan until it boils. In another bowl dissolve the flour with ¼ cup of water. Once dissolved, add to the gravy to reduce and thicken. Add salt and pepper to taste.
Re-strain before serving.
