Lentil Tabbouleh

This tabbouleh dish is inspired by Lebanese cuisine, in addition to its exquisite flavor, it gives you a lot of iron so you will have energy all day, since it is made with lentils combined with purple onion, mint, parsley and a lemon vinaigrette.

4 portions
  • 3 cups Water
  • 1 cup lentil
  • 1 tablespoon salt
  • 1/2 cups red onion, chopped, for the tabbouleh
  • 1/2 cups parsley, finely chopped, for the tabbouleh
  • 1/2 cups peppermint, finely chopped, for the tabbouleh
  • 1 cup tomtato, cut into small cubes, for the tabbouleh
  • 1/8 cups lemon juice, for the tabbouleh
  • 3 tablespoons extra virgin olive oil, for the tabbouleh
  • 1 teaspoon salt, for the tabbouleh
  • 1/2 teaspoons zataar, for the tabbouleh
  • 3 tablespoons feta cheese, to decorate (optional)
  • to taste peppermint, to decorate


Heat the water over medium heat with the salt and cook the lentils until they are cooked. Strain and cool.
In a bowl, mix the lentils with the purple onion, the parsley, the mint, the tomato, the lemon juice, the extra virgin olive oil, the salt and the zataar. Mix perfectly.
Serve in a deep dish, garnish with feta cheese and a sprig of mint.


Serve in a bowl with a little sprinkled feta cheese.


We recommend using fresh mint, its aroma and flavor will give an exceptional touch.
