Substitute paella carbohydrates with this rich option. Prepare this original vegan paella, which in addition to healthy is delicious, for its magnificent combination of vegetables such as Bits of Cauliflower and Broccoli Eva®, peas and pumpkin with a touch of saffron is the best choice for lunch time.

Ingredients

6 portions
  • 3 tablespoons olive oil
  • 1 cup tofu, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 red pepper, cut into boxes
  • 1 pumpkin, cut into cubes
  • 3/4 cups Cauliflower Eva® Bits
  • 3/4 cups Broccoli Eva® Bits
  • 1/2 cups white wine
  • 1 tablespoon saffron
  • 1 cup pea, Cooked
  • 1/3 cups black olive
  • 8 dehydrated tomatoes, cut into strips
  • 1 cup artichoke heart
  • 1 tablespoon parsley, finely chopped
  • 2 yellow lemons

Preparation

In a paella pan, heat the oil over medium heat, add the cubes of tofu, onion, red pepper and cook for 5 minutes, add the pumpkin and cook for 2 more minutes.
Add the Cauliflower Bits and the Broccoli Eva® Bits, cook a few minutes and add the wine. Cook for 15 minutes over low heat.
Add the peas, the black olives, the dehydrated tomatoes and the artichoke hearts, cook for 5 more minutes over low heat.
Garnish with parsley and yellow lemon.

PRESENTATION

On an extended plate, accompanied by a glass of wine.

TIPS

You can substitute saffron for paprika.

No vale la pena, ingredientes caros, no sabe bien, la receta no especifica cuándo poner el ajo y el azafrán, no sabe para nada a paella, no pierdan su tiempo!
