Vegan Stuffed Mushrooms

Prepare these delicious and original mushrooms stuffed with couscous with red onion, carrot and peppers. In this recipe you will have all the food groups you need to have a delicious and balanced diet.

Ingredients

  • 250 grams of mushroom White
  • 4 spoonfuls of olive oil
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 1 tooth of Garlic
  • 1/4 of Cup of purple Onion finely chopped
  • 1/2 Cup of carrot finely chopped
  • 1/2 Cup of lentil cooked and drained
  • 1/2 Cup of couscous Cooked
  • 1/2 Cup of Bell pepper of colors, finely chopped
  • 1/8 of Cup of parsley finely chopped
  • 1 tablespoon of lemon juice

    Preparation

    On a board with a knife clean the mushrooms , remove the trunk and hollow, finely chop the filling and reserve.
    Heat a pan over medium heat with olive oil and cook the mushrooms face down for 5 minutes. Turn the mushrooms, season to taste with salt and pepper, remove from the pan and reserve.
    In the same pan add a little more olive oil and fry the garlic, with the onion, the carrot, the lentils, the couscous, the colored peppers, the cut of mushrooms, the parsley, season with the lemon juice, salt and pepper to your liking.
    On a board stuffed the previously cooked mushrooms, serve on a plate and add a little olive oil. Enjoy

    PRESENTATION

    Serve the mushrooms on a small board and enjoy.

    TIPS

    To clean the soil of the mushrooms you can wash them with a little water and flour or you can remove the skin of the mushroom with the help of a small knife.
