Prepare these delicious and original mushrooms stuffed with couscous with red onion, carrot and peppers. In this recipe you are going to have all the food groups you need to have a delicious and balanced diet.

Ingredients

4 portions
  • 250 grams mushroom, White
  • 4 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 clove garlic
  • 1/4 cups red onion, finely chopped
  • 1/2 cups carrot, finely chopped
  • 1/2 cups lentil, cooked and drained
  • 1/2 cups couscous, Cooked
  • 1/2 cups Bell pepper, colored, finely chopped
  • 1/8 cups parsley, finely chopped
  • 1 tablespoon lemon juice

Preparation

On a board with the help of a knife, clean the mushrooms, remove the trunk and hollow, finely chop the filling and reserve.
Heat a skillet over medium heat with olive oil and cook the mushrooms upside down, for 5 minutes. Flip the mushrooms, season to your liking with salt and pepper, remove from the pan and reserve.
In the same pan add a little more olive oil and fry the garlic, with the onion, the carrot, the lentils, the couscous, the colored peppers, the mushroom cut, the parsley, season with the lemon juice, salt and pepper to your liking.
On a board, fill the previously cooked mushrooms, serve on a plate and add a little olive oil. Enjoy.

PRESENTATION

Serve the mushrooms on a small board and enjoy.

TIPS

To clean the earth from the mushrooms you can wash them with a little water and flour or you can remove the skin of the mushroom with the help of a small knife.
