Place the cauliflower Eva® bits in a bowl and dehydrate in the microwave for 5 minutes. Dry the excess water with an absorbent paper towel.

Heat the butter in a pan over medium heat and with the help of a ring place the previous mixture to form the bread, cook 3 minutes on each side. It cools completely and reserves.

For the caramelized onions, heat a skillet over medium heat with the butter, add the purple onion, the güero pepper and cook for 2 minutes. Add the refined sugar and red wine, cook until the liquid is reduced and caramelize season to your liking. Remove from heat and reserve.
