Add the bean sauce to the base plate, serve the chile with the opening facing down, and garnish with cream, goat cheese, epazote leaves, and cherry tomatoes.

Tips

Soak the chiles in hot water with piloncillo and a bit of apple cider vinegar to remove the heat and soften them. Make sure they don’t get too soft so they retain the desired consistency.
