In a pot, add the oil and heat on low flame. Fry the onion, garlic, and tomato for 5 minutes and add the brains. Let cook for 10 minutes, covered. Add the epazote, salt, and pepper, and cook for another 10 minutes or until all the liquid has evaporated. Set aside.
