Nopales with Rajas in Green Sauce

If you love Mexican food, do not hesitate to make these nopalitos with rajas in green sauce, ideal for vegetarians, they are light and have a spicy touch that will be the sensation. Serve them with corn tortillas.

Ingredients

4 servings
  • enough of Water
  • 1 teaspoonful of Salt
  • 1 teaspoonful of baking soda
  • 12 pieces of nopal cut into strips
  • 5 pieces of green tomato
  • 1/4 of piece of onion
  • 3 pieces of serrano pepper
  • 1 clove of garlic
  • 1 Cup of coriander
  • 6 pieces of poblano pepper
  • 1 tablespoon of oil
  • 1/2 Cup of onion in strips
  • 1/4 of Cup of Panela cheese fallen apart
  • to taste of Corn tortillas

    Preparation

    Boil the water in a pot over medium heat, add salt, baking soda and nopales until they change color and are soft. Rinse with cold water and drain to avoid drooling.
    For the sauce, in a pot with boiling water, cook the tomatoes, onion, garlic and chilies for around 25 minutes. Drain, chill and blend until a smooth sauce is obtained. Reserve.
    Grill poblano chiles in a high heat on a griddle. Put them in a plastic bag and let them sweat around 15 to 20 minutes. With a knife, clean and unveil the chiles, cut into thin strips and reserve.
    In a pot heats the oil, cook the onion, add the nopales and the slices and cook 5 minutes. Add the green sauce, cook until thick and season.
    Serve on a plate, decorate with panela cheese and serve with warm corn tortillas.

    PRESENTATION

    Decorate with cheese, and serve in corn tortilla tacos.

    TIPS

    Sodium bicarbonate when cooking nopales will prevent them from being sluggish.

    A los nopales cuando se ponen a cocer se le poneven el agua de hervir su sal ajo cebolla y cascara de tomate verde unas dos o tres y asi se cuesen.
