Preparation
Boil the water in a pot over medium heat, add salt, baking soda and nopales until they change color and are soft. Rinse with cold water and drain to avoid drooling.
For the sauce, in a pot with boiling water, cook the tomatoes, onion, garlic and chilies for around 25 minutes. Drain, chill and blend until a smooth sauce is obtained. Reserve.
Grill poblano chiles in a high heat on a griddle. Put them in a plastic bag and let them sweat around 15 to 20 minutes. With a knife, clean and unveil the chiles, cut into thin strips and reserve.
In a pot heats the oil, cook the onion, add the nopales and the slices and cook 5 minutes. Add the green sauce, cook until thick and season.
Serve on a plate, decorate with panela cheese and serve with warm corn tortillas.
