Nopales with Rajas in Green Sauce

If you love Mexican food, do not hesitate to make these nopalitos with rajas in green sauce, ideal for vegetarians, they are light and have a spicy touch that will be the sensation. Serve them with corn tortillas.

Ingredients

4 portions
  • water
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 12 nopales, cut into strips
  • 5 green tomatoes
  • 1/4 onions
  • 3 serrano chiles
  • 1 clove garlic
  • 1 cup fresh coriander
  • 6 poblano chiles
  • 1 tablespoon oil
  • 1/2 cups onion, in plasters
  • 1/4 cups panela cheese, fallen apart
  • corn tortilla

Preparation

Boil the water in a pot over medium heat, add the salt, bicarbonate and nopales until they change color and are soft. Rinse with cold water and drain to avoid slime.
For the sauce, in a pot with boiling water, cook the tomatoes, onion, garlic and chilies for around 25 minutes. Drain, chill and blend until a smooth sauce is obtained. Reserve.
Grill the poblano peppers on a comal over high heat. Put them in a plastic bag and let them sweat for about 15 to 20 minutes. With a knife, clean and devein the chiles, cut into thin strips and reserve.
In a small pot, heat the oil, cook the onion, add the nopales and the slices and cook 5 minutes. Add the green sauce, cook until thick and season.
Serve on a plate, garnish with the panela cheese and serve with warm corn tortillas.

PRESENTATION

Garnish with cheese, and serve in corn tortilla tacos.

TIPS

The baking soda in the cooking of the nopales will prevent them from being slimy.

A los nopales cuando se ponen a cocer se le poneven el agua de hervir su sal ajo cebolla y cascara de tomate verde unas dos o tres y asi se cuesen.
