Cut the potatoes into ½ cm slices, sauté in a pan until they are brown, add the chopped garlic and pepper until they are white.
Add boiling water, peas, aromatize with the herbs, season with salt, pepper and saffron cover and cook for 15 minutes more. Remove the aromatic herbs.
When the potatoes are cooked, poach the Claras de Huevo San Juan and serve on the saucer.
