Ingredients

4 portions
  • 600 grams chicken breasts
  • 1 kilo green tomato
  • 2 onions
  • 4 zucchini
  • 3 garlic
  • 1/2 bouquets fresh coriander
  • 4 teaspoons chicken consommé
  • 2 dried laurels
  • 1 avocado pulp
  • 2 chile de árbol peppers

Preparation

Cut the breasts into squares. Fry the chicken in a pot, once it is golden, remove it from the stove and reserve.
In a comal roast the onion, green tomato, garlic and arbol pepper. Blend them and add the cilantro.
Fry the sauce in the pot that you cooked the chicken, add the zucchini cut into squares.
Add the sauce, bay leaf and chicken broth. Cover the preparation. Cook for 30 minutes. Once the chicken is cooked, add the avocado pulp and turn it off.

PRESENTATION

Serve with a salad of carrot, lettuce, watercress and tomato.

TIPS

You can make this recipe in the oven. Ask the pollero to remove the skin and bone from the breast.
