Ingredients

6 portions
  • 1 whole chicken

Preparation

Start cutting the wings. To cut them look for the joints of the bones, you find them moving the wing (forward and backward), once you identify it, cut in the union. For the second wing, repeat the same procedure.
To cut the legs. Start by cutting the skin, then look for the joints of the bones or bend the legs back, this is to facilitate the view of the bones in the extremities; Cut in the union and remove the leg that comes with the thigh. Turn the chicken so that it fits you. Repeat the procedure with the other leg.
To separate the leg from the thigh. Remove the skin (pulling towards one end). Find the union of the bones, take the knife and cut (without much force) separating the thigh from the leg, repeat the procedure with the other piece.
To cut the breast. Remove the skin from the remaining chicken. You have to locate the sternum, this is the bone that divides the breast; make an incision between the breast and the sternum. Cut as close to the sternum as possible to take advantage of everything you can. Repeat the procedure with the other breast.
Finally, it separates the sternum from the huacal and reserve.
