Preparation
For the filling, cook the onion, garlic, huitlacoche, epazote and corn kernels on the oil for 10 minutes, season with salt and pepper. On a board place the chicken fillets and fill with the previous preparation and a little cheese, roll and close with a toothpick.
Heat a pan with oil and cook the chicken until golden brown. Set aside.
For the sauce, blend the cream cheese with the half cream, the evaporated milk, the poblano rajas, and the onion powder.
In a saucepan add the butter and the sauce, bring to a boil and cook for 5 minutes more.
Serve on a plate, with a thin layer of sauce as a base and place the chicken, cover with salsa and decorate with corn.
