Ingredients

6 portions
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons onion, finely chopped
  • 1/2 cups apricot jam, sugarfree
  • 1 tablespoon dry chile de árbol pepper
  • 3 tablespoons fresh coriander
  • 4 cups whole-grain rice, Cooked
  • 4 tablespoons cashews
  • 1 tablespoon peppermint

Preparation

Season the chicken and cook it in hot oil until it looks well browned.
Add the onion, jam, chile and cilantro, mix all the ingredients and continue until the chicken is soft. Incorporate rice.
Serve in a bowl and decorate with mint and Indian walnut.
