Preparation
Preheat the oven to 180º C (356F).
Tie the loin with hemp thread and then salt.
In a baking dish, pour in the water, put in the loin, and add the garlic head cut in half.
Add onion, thyme and plums. Cover with aluminum foil, reserve.
Bake for 45 minutes. Remove from the oven, check the cooking and remove the plums from the container with a little of the broth.
Add the bacon in another tray, put it in the oven and bring it to the same temperature. Remove once it is well browned and pulverized.
Remove the string from the loin and cover the loin in the pulverized bacon.
For the sauce: Blend the plums or prunes with a little of their juice, onion and garlic (the same as the cooking), heat a pot and add this sauce. Reduce and season. Serve separately.
