Ingredients

6 portions
  • 2 1/2 cups pork meat, solid, medium cubed
  • 2 tablespoons vegetal oil
  • 1 cup chicken soup
  • to taste salt
  • 2 tablespoons vegetal oil
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup tomtato, in cubes
  • 2 cups pumpkin, in medium cubes
  • 2 jalapeño peppers, sliced
  • 1 cup corn grain, yellow, canned, drained
  • 1/4 cups epazote, in sheets
  • to taste salt
  • to taste black pepper

Preparation

In a saucepan with a little hot oil over medium heat, fry the pork while stirring; Once the meat turns a dark color, add the cup of chicken broth and a little salt. Cook for 20 minutes over low heat, remove from heat and reserve the meat from cooking.
In a large saucepan, heat a little oil, fry the onion and garlic, that is, cook over low heat without stopping moving until the vegetables begin to take on a bright tone.
Add the tomato, the pumpkin and the Cuaresmeño pepper; cook until the vegetables begin to release their water.
Add the pork, the yellow corn, the epazote and a tablespoon of the cooking broth. Season with salt and pepper and cook for 8 minutes.
Serve with black beans and corn tortillas.

PRESENTATION

Accompany with white rice and hot tortillas.

TIPS

So that the meat is not tough, try to cook it over medium low heat, this will brown the surface and properly concentrate its juice.
