Ingredients

6 portions
  • 8 ounces elbow macaroni pasta
  • 1 tablespoon olive oil
  • 1 cup onion, finely chopped
  • 1 cup red pepper, finely chopped
  • 1 teaspoon salt
  • 1/2 cups flour
  • 1/2 cups butter
  • 1 1/2 cups whole milk, hot
  • 1 cup Yoghurt Greek Style FAGE® Total 0%
  • 1/4 teaspoons nutmeg powder
  • 1/2 teaspoons Tabasco sauce
  • 1 1/2 cups cheddar cheese, grated
  • 1/4 teaspoons black pepper
  • 1/4 cups feta cheese, shredded
  • 1/2 cups breadcrumbs, panko

Preparation

Boil a pot of water with salt. Add the macaroni and cook for 4 minutes.
Drain and rinse with cold water to stop cooking.
Heat the olive oil in a pan over medium heat. Add the onion and sauté for 3 minutes. Add the red pepper and salt and continue cooking until they soften. Remove from heat and reserve.
Preheat the oven to 350ºF. Grease a baking dish with butter. Melt the butter in a medium saucepan. Add the flour, stir and cook for 2 minutes.
Slowly beat the warm milk and 1/2 cup of Greek Style Yoghurt FAGE® Total 0%, beating constantly to keep it soft.
Add the nutmeg.
Bring to a simmer and remove from heat.
Add 1 1/4 cups of cheddar cheese.
Beat until smooth.
Add the 1/2 cup Yoghurt Greek Style FAGE® Total 0% and tabasco.
Combine the macaroni, the onion mixture and the cheese sauce, in the previously greased container.
Bake for 30 minutes.
Combine the rest of the cheddar cheese, feta cheese and bread crumbs. Remove the casserole from the oven and cover with the crumb mixture of bread and cheese. Return to the oven for 15 minutes or until golden brown. To serve.
