Chicken Pasta in Guajillo Sauce

If you are looking for easy and practical recipes, this recipe for Chicken Pasta in Guajillo Sauce is a great option, since you can cook it all in the same pan.   • 1/4 onions
  • 1 clove garlic
  • 6 tomatoes
  • 5 guajillo chilies, deveined, seedless and soaked
  • 1 cup chicken soup
  • enough salt and pepper
  • 1 tablespoon oregano, dry
  • 1 tablespoon thyme, ground
  • 3 tablespoons Margarina Primavera®, 400 g
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups chicken breast, cut into cubes
  • 1 cup Water
  • 400 grams fusilli pasta
  • 1 package cream cheese, cut into cubes and at room temperature, 190g
  • 1 leave bay (laurel)
  • enough guajillo chili, in rings and fried
  • enough Cotija cheese, to serve
  • enough parsley, finely chopped, to garnish


For the sauce, blend the onion with the garlic, the tomatoes, the chilies, the chicken stock, the salt, the pepper, the oregano and the thyme until obtaining a homogeneous mixture. Set aside.
In a deep frying pan, melt 3 tablespoons of Margarina Primavera®, cook the onion and garlic, add the chicken, season with salt and pepper and cook until golden brown. Remove and set aside.
In the same pan, add the sauce and a cup of water. Once the sauce comes to a boil, add the pasta, cover and cook over medium-low heat until the pasta is almost done.
Add the chicken, the cream cheese, the bay leaf and mix until completely incorporated.Finish the cooking until the pasta is cooked and the sauce is creamy. Season with salt and pepper.
Serve the preparation and garnish with guajillo chili rings, Cotija cheese and fried parsley.

It is important that the sauce is quite liquid so you can cook the pasta with it. If you see that the sauce is not enough for cooking the pasta, you can add a little more chicken broth.
