Chicken Pasta in Guajillo Sauce

If you are looking for easy and practical recipes, this recipe for Chicken Pasta in Guajillo Sauce is a great option, since you can cook it all in the same pan. The chile guajillo is a dry chile widely used in Mexican cuisine to give color and flavor to sauces, marinades, moles and other stews, that's why it is the best option for this pasta recipe.

Ingredients

4 servings
  • 1/4 of piece of onion
  • 1 clove of garlic
  • 6 pieces of tomato
  • 5 pieces of guajillo chili pepper deveined, seedless and soaked
  • 1 Cup of chicken soup
  • enough of salt and pepper
  • 1 tablespoon of oregano dry
  • 1 tablespoon of thyme ground
  • 3 spoonfuls of Margarina Primavera® 400 g
  • 1/4 of Cup of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 2 cups of chicken breast cut into cubes
  • 1 Cup of Water
  • 400 grams of fusilli pasta
  • 1 package of cream cheese cut into cubes and at room temperature, 190g
  • 1 sheet of laurel
  • enough of guajillo chili pepper in rings and fried
  • enough of Cotija cheese to serve
  • enough of parsley finely chopped, to garnish

    Preparation

    For the sauce, blend the onion with the garlic, the tomatoes, the chilies, the chicken stock, the salt, the pepper, the oregano and the thyme until obtaining a homogeneous mixture. Set aside.
    In a deep frying pan, melt 3 tablespoons of Margarina Primavera®, cook the onion and garlic, add the chicken, season with salt and pepper and cook until golden brown. Remove and set aside.
    In the same pan, add the sauce and a cup of water. Once the sauce comes to a boil, add the pasta, cover and cook over medium-low heat until the pasta is almost done.
    Add the chicken, the cream cheese, the bay leaf and mix until completely incorporated.Finish the cooking until the pasta is cooked and the sauce is creamy. Season with salt and pepper.
    Serve the preparation and garnish with guajillo chili rings, Cotija cheese and fried parsley.

    PRESENTATION

    Serve on a plate and decorate with fried guajillo chili rings, Cotija cheese and chopped parsley.

    TIPS

    It is important that the sauce is quite liquid so you can cook the pasta with it. If you see that the sauce is not enough for cooking the pasta, you can add a little more chicken broth.
