Do you know the history of the Caesar salad? The César salad is the pride of Tijuana, its origin is in the restaurant with the same name, thanks to a chef of Italian descent who worked there. Currently there are countless variants of the caesar salad recipe. We propose you a version of Caesar salad with chicken, easy and quick to prepare.

Ingredients

2 portions
  • 1/4 cups olive oil, for the chicken
  • 1 teaspoon garlic powder, for the chicken
  • to taste salt, for the chicken
  • to taste black pepper, for the chicken
  • 400 grams chicken breast, clean and boneless
  • 2 anchovy, for the dressing
  • 1 tablespoon garlic, chopped, for the dressing
  • 1 teaspoon Dijon mustard, for the dressing
  • 1 tablespoon English sauce, for the dressing
  • 1 San Juan® Egg, for the dressing
  • 1/2 lemons, (juice) for the dressing
  • 1/2 cups olive oil, for the dressing
  • 1 tablespoon parmesan cheese, grated, for the dressing
  • enough romaine lettuce
  • enough crouton, To accompany
  • enough parmesan cheese, in sheets, to decorate

Preparation

In a bowl mix the olive oil with the garlic powder, the salt and the pepper. Varnish the grill pan with the mixture, place the chicken and bathe with the same mixture until covered. Cook for 15 minutes, try to make each side well cooked. Remove from heat and cut into 1 centimeter thick sheets. Reservation.
For the dressing, in a salad bowl mix the anchovies with the garlic, the Dijon mustard and the Worcestershire sauce, lean on a spoon to gradually incorporate the ingredients. Break the shell of the piece of Egg San Juan® and separate the white from the yolk. Pour only the yolk into the preparation and incorporate. Add the lemon juice and pour the olive oil little by little while continuing to move. Add the Parmesan cheese and the lettuce leaves, bathe completely.
Serve the lettuce leaves on a plate, add the cooked chicken, the bread croutons and decorate with parmesan slices. Enjoy!

PRESENTATION

Serve the salad accompanied by slices of parmesan and croutons.

TIPS

Rest the egg on boiled water for a minute, this will help pasteurization.
