Ingredients

2 portions
  • 8 leaves romaine lettuce
  • 12 shrimps
  • to taste parmesan cheese, grated
  • pinches salt
  • pinches black pepper
  • croutons
  • 2 eggs, for the dressing
  • 1 tablespoon anchovy paste, for the dressing
  • 1 teaspoon garlic, for the dressing
  • 1 teaspoon Dijon mustard, for the dressing
  • 3 tablespoons lemon juice, for the dressing
  • 1/2 cups olive oil, for the dressing

Preparation

For the dressing: Chop the garlic, add the anchovy paste, the olive oil, the lemon juice, the Dijon mustard, the scrambled egg and season.
Stir with the help of a balloon whisk until all the ingredients are perfectly mixed.
Heat the shrimp in a pan.
Cut the lettuce leaves in half, serve two lettuce leaves in each glass.
Add the shrimp, croutons and Parmesan cheese.
Serve dressing to taste.

PRESENTATION

Serve in a small crystal glass. You can place the glasses on a long rectangular plate. Your guests will be fascinated with the taste and presentation.
