Preparation
Take the salmon, remove its shell and finely chop it with a sharp knife.
Peel the avocados and chop finely. Mix carefully with 2 tablespoon of lemon juice to prevent it from getting dark.
In a deep bowl, mix olive oil, lemon juice, balsamic vinegar, salt and pepper.
Chop the chives.
In a bowl, mix the samón with half the vinaigrette and half the scallion.
In another bowl, mix the avocado with the other half of the vinaigrette and the other half of the scallion.
Assemble each tartare using a cookie cutter. Place the cutter on a plate, fill half with the avocado tartar and then on that half a layer of the tartar of salmon.
Carefully remove the cookie cutter and your tartare will be ready, repeat for the other 3 servings.
