Prepare a healthy meal with this recipe of Quinoa Salad with Avocado, beans, pumpkin, corn and tomato. Served with a tasty cilantro vinaigrette

Ingredients

4 servings
  • 200 grams of quinoa rinsed and drained
  • 400 milliliters of Water for cooking quinoa
  • 1 tablespoon of Salt for cooking quinoa
  • 1/2 Cup of black bean cooked
  • 1 Cup of cherry tomato varied colors, halved
  • 1/2 Cup of red onion finely sliced
  • 2 pieces of pumpkin in half moons
  • 1 piece of yellow bell pepper yellow, cut into fine strips
  • 2 pieces of Avocado from Mexico cubed
  • 1/2 tablespoon of Salt
  • 1/2 tablespoon of black pepper ground
  • 1 Cup of coriander
  • enough of Water
  • 2 spoonfuls of lemon juice for the vinaigrette
  • 2 spoonfuls of White vinegar for the vinaigrette
  • 1/2 clove of garlic for the vinaigrette
  • 2 spoonfuls of honey for the vinaigrette
  • 1/4 of tablespoon of Dijon mustard for the vinaigrette
  • 1/2 tablespoon of Salt for the vinaigrette
  • 4 spoonfuls of olive oil for the vinaigrette

    Preparation

    In a saucepan, boil water with salt, add quinoa and cook about 20 minutes or until puffed. Drain and cool down
    In a bowl, mix quinoa with beans, cherry tomatoes, red onion, zucchini, corn kernels and avocado. Season with salt and pepper.
    For the vinaigrette, in a pan with boiling water, blanch cilantro for one minute. Remove and chill in iced water. Drain.
    In a blender, puree lime juice, vinegar, garlic, honey, mustard, salt and cilantro until smooth. Slowly pour in olive oil in a stream while mixing until emulsified.
    Serve salad with cilantro vinaigrette and enjoy.

    TIPS

    Cilantro is scalded in boiling water for a few moments, or blanched, to set and strengthen its color. It’s important to blanch it and place it immediately in iced water to stop the cooking process.
