Keep your healthy lifestyle this Christmas with this Sweet Potato Salad with Nuts and serve it as an entry to the Christmas Eve dinner. The homemade yellow lemon vinaigrette with Dijon mustard gives it an acidic touch that complements deliciously the flavors of the salad.

For this sweet potato salad with dried fruits we recommend using dehydrated cranberry, but if you want to give an original touch and spicy you can use cranberry enchilado. What do you think of this entry for Christmas?

Ingredients

4 servings
  • 3 pieces of sweet potato
  • 2 spoonfuls of olive oil
  • enough of Salt
  • enough of black pepper
  • 1/4 of Cup of nut toast
  • 1/4 of Cup of cranberry
  • 1/3 of Cup of goat cheese
  • 1/4 of Cup of pumpkin seed
  • 2 spoonfuls of yellow lemon for the yellow lemon vinaigrette
  • 1 teaspoonful of Dijon mustard for the yellow lemon vinaigrette
  • 1/2 Cup of olive oil for the yellow lemon vinaigrette
  • 1 tablespoon of White vinegar for the yellow lemon vinaigrette
  • enough of Salt for the yellow lemon vinaigrette
  • enough of black pepper for the yellow lemon vinaigrette
  • 1 piece of avocado cut into slices
  • enough of coriander leaves, to decorate

    Preparation

    Preheat the oven to 200 ° C.
    On a board and with the help of a knife, peel and cut the sweet potatoes into cubes.
    Place the sweet potato on a baking tray and sprinkle olive oil, salt, pepper and bake for 30 minutes or until smooth. Remove and cool.
    In a bowl mix the sweet potato with the walnuts, blueberries, goat cheese, pips and reserve.
    For the vinaigrette, blend all the ingredients until emulsified.
    Serve the salad in a bowl, add the avocado and a little of the vinaigrette, garnish with coriander leaves. Enjoy

    TIPS

    If you do not have an oven, you can cook the sweet potatoes in boiling water with salt.
