  • 3 sweet potatoes
  • 2 tablespoons olive oil
  • enough salt
  • enough black pepper
  • 1/4 cups walnut, toast
  • 1/4 cups cranberry
  • 1/3 cups goat cheese
  • 1/4 cups pumpkin seed
  • 2 tablespoons yellow lemon, for the yellow lemon vinaigrette
  • 1 teaspoon Dijon mustard, for the yellow lemon vinaigrette
  • 1/2 cups olive oil, for the yellow lemon vinaigrette
  • 1 tablespoon white vinegar, for the yellow lemon vinaigrette

  • 1 avocado, cut into slices

Preheat the oven to 200 ° C (392F)
On a board and with a knife, peel and cut the sweet potatoes into cubes.
Place the sweet potato on a baking tray and sprinkle olive oil, salt, pepper and bake for 30 minutes or until smooth. Remove and cool.
In a bowl mix the sweet potato with the walnuts, blueberries, goat cheese, pips and reserve.
For the vinaigrette, blend all the ingredients until emulsified.
Serve the salad in a bowl, add the avocado and a little of the vinaigrette, garnish with coriander leaves. Serve.

If you do not have an oven, you can cook the sweet potatoes in boiling water with salt.

Excelente receta. Es una ensalada deliciosa. El camote también se puede cocer con un poco de agua, sal y hojuelas secas de ajo. Y también se puede usar una mezcla de lechuga, espinaca y otras hojas verdes.
