Ingredients

  • 1 head garlic
  • 1 teaspoon salt
  • extra virgin olive oils

Preparation

Soak the garbanzo beans from one day to the next, changing the water from time to time. The next day in a pressure cooker cook the chickpeas covered with water lightly, place inside the pot the bay leaf, a piece of onion, a clove of crushed garlic and some salt and leave about 40 min or until they are well soft. let stand until they are less hot.
In the blender place the chickpeas with part of the cooking water, add salt to taste, several cloves of garlic or to taste and olive oil and liquefy at high speed helping with a spoon and let the cream thicken and homogenize. Refrigerate.
