Ingredients: 10 pasilla chiles, cleaned and deveined; 1/4 white onions; 1 clove garlic, peeled and seedless; 5 tomatillos, cut into quarters; 100 milliliters beer, light or dark; 20 milliliters vegetable oil; 3 allspice berries; 2 pinches coarse salt; 80 grams Cotija cheese

Fry the chiles in oil and remove them. Roast the garlic, onion, and tomatillos. Blend everything with the beer, a pinch of salt, and pepper. Fry this mixture and season with another pinch of salt. Serve with crumbled or grated cotija cheese.
