Today we bring you a refreshing aperitif ideal for hot days. The Greek tzatziki is a very recurrent sauce in the kitchen of the Hellenic country and is based on yoghurt and cucumber. The ease of preparing this Greek tzatziki and the low price of its ingredients give this recipe a great versatility in the kitchen, being able to serve as an aperitif or as a companion of many dishes. In Greek cuisine, Greek tzatziki is often served with traditional recipes such as dolmades, a roll of chard leaf or vine stuffed with rice, or gyros, a kind of Greek kebab.

  • 500 grams greek yogurt
  • 1 cucumber, grated
  • 20 milliliters olive oil
  • 1/2 lemons, just the juice
  • 1 clove garlic
  • to taste salt and pepper
  • to taste peppermint, or peppermint
  • 400 grams flour, of pastry, for the focaccia
  • 250 milliliters Water, tibia
  • 30 milliliters olive oil
  • 20 grams yeast
  • to taste oregano
  • to taste thyme
  • to taste rosemary
  • 1 pinch salt


GREEK TZATZIKI: Grate a medium cucumber on a plate. Once grated, until a consistency similar to puree, add salt so that the cucumber is losing water.
Pour the yoghurt in a bowl. If you want to reduce the caloric content of the dish, you can substitute skimmed ones, making sure to remove the whey and being aware that the final result will have less consistency and creaminess.
Add the olive oil, the juice of half a lemon, a clove of chopped or mashed garlic , a little salt, pepper, and mint or chopped mint.
Drain the cucumber very well and add it to the bowl with the rest of the sauce.
Introduce in the refrigerator 1 or 2 hours so that it acquires a creamier consistency and consumes very cold.
FOCACCIA DE TOMILLO Y ROMERO: Dissolve the yeast in warm water.
Mix wheat flour and salt in a bowl.
Add the water with the yeast little by little to the bwol where the flour and salt are.
Let the dough of the focaccia rest in a warm place (35 - 40 ° C) covered with a cloth until it doubles its volume. You can spread a little flour on the side of the cloth that is in contact with the focaccia mass to prevent it from sticking up.
Pre-heat the oven. Stretch the bread with the help of a rolling pin and with your hands. Paint the dough on the outside, incorporating the chopped spices and make small holes along the dough (without completely crossing it). Let stand about 10 minutes.
Cook the bread in the oven at 180 ° C for about 15 minutes.
