Preparation
Heat a pan over medium heat with the lard, cook the bacon until all the fat is loose and completely fried, fry the pasilla chili over low heat until the grease in the pan turns a reddish color, remove most of the chiles and reserve.
Fry the onion and add the beans with everything and liquid, add the avocado leaf and cook until they boil, season to your liking, mash to a paste and reduce the liquid in half.
Add the oaxaca cheese and keep moving until it melts completely and all the liquid evaporates.
In a greased grill cook the flank steak until it is well cooked.
Serve the beans, sprinkle with cheese, add a fresh epazote leaf and pasilla chili rings, served with tortilla chips and a flank steak.
