With this recipe of Chayotes Stuffed with Creamy Tuna Salad nobody will ever think that eating vegetables is boring. Chayotes are one of the vegetables with the most amount of water and you can prepare them in very fresh dishes for any time of the year.

Ingredients

4 portions
  • 2 liters Water
  • 4 chayote squash
  • to taste salt
  • 1 cup bow tie pasta, cooked
  • 1/4 cups onion, finely chopped
  • 1/4 cups red pepper, cut into cubes
  • 3 tablespoons celery, finely chopped
  • 1/4 cups pea
  • 1/4 cups whole corn kernels
  • 1 1/2 cups Vitalinea® natural Greek style, unsweetened, 900g (31oz)
  • 1 tablespoon mustard
  • 1 tablespoon garlic powder
  • to taste salt and pepper
  • enough corn, baby, sliced to decorate
  • enough chinese parsley, to decorate
  • 1 1/2 cups tuna

Preparation

On a wooden board, peel the chayotes, cut in half and cook for 15 minutes in boiling salted water or until softened. Drain and cool.
On a board, with the help of a spoon hollow out the chayotes and chop the filling.
In a bowl mix the pasta, tuna, stuffed chayote, onion, red pepper, celery, peas, corn kernels, yogurt Vitalínea® Greek without sweetening, mustard, garlic powder, season with salt and pepper.
With a spoon filled with the chayotes, decorate with baby corn and Chinese parsley.

PRESENTATION

On a plate, decorate with baby corn and Chinese parsley.

TIPS

Due to its high protein content, the unsweetened Greek Vitaline Yoghurt® is the best option to replace the cream.
