Ingredients

6 portions
  • 2 cups sushi rice
  • 5 tablespoons rice vinegar
  • 2 1/2 tablespoons sugar, granulated
  • 1 pinch sea ​​salt

Preparation

Clean the rice and place it in a strainer. Rinse under cold running water twice. Soak in warm water for 5 minutes. Drain and pass to the Express® Pressure Cooker.
To prepare gohan rice add 4 cups of water to the pot with the rice prepared. For rice for sushi add only 3 3/4 cups.
Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for 25 minutes or until constant steam comes out, lower the flame to medium and cook for 10 minutes.
Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it! Sponge the rice with the help of a fork (so you do not beat).
Heat the rice vinegar in a small pot, mix it with the sugar Preparation and salt until they dissolve. Spread the rice in a non-metal container.
Pour the vinegar mixture over the hot rice and insert and lift a wooden spoon to turn the rice and separate the grains (without mixing). Fan the rice for 5 minutes. If it gets too cold, it hardens. Do not refrigerate.

TIPS

To prevent the rice prepared for sushi from drying, keep it covered with a damp cloth until the moment of use.
