Ingredients

6 portions
  • 1 cup SOS® Long Rice
  • 6 cups chicken soup
  • 400 grams chicken, shredded
  • 1 1/2 cups chickpea, cooked
  • 1 clove garlic
  • 1 tablespoon oil
  • 2/3 cups carrot, diced
  • 1/2 cups onion, finely chopped
  • 4 chipotle chilies
  • 1 branch epazote, fresh
  • 1 fist fresh coriander, chopped
  • 4 lemons, sliced ​​green
  • 1 tomtato, chopped ripe
  • 2 serrano peppers, finely chopped

Preparation

In a large saucepan, put the chicken, the broth, the chickpeas and the garlic.
Heat the oil in a pan, add the carrot and onion and fry for 3 minutes.
Transfer the carrots and onions to the saucepan with the chicken broth and add the chipotle peppers, the epazote and salt to taste. Simmer, covered, for 30 minutes.
Put some shredded chicken in each of the dishes on which it will be served.
Pour over the hot soup and sprinkle chopped cilantro and peppers.
Serve the lemon, tomato, the serrano peppers and the white rice in separate garnish plates so that each one serve themselves what they like.
