Ingredients

2 portions
  • 500 grams nopal
  • 1 white onion
  • 2 tomatoes
  • 350 grams panela cheese
  • 1 bunch fresh coriander
  • 4 tablespoons oil
  • to taste salt
  • to taste black pepper

Preparation

Chop the nopales into very small squares and boil them by changing the water 3 times and adding baking soda to cut the drool.
Chop the onion very finely and sauté it with a little olive oil, adds the cactus. Season with salt and pepper. Let cool and reserve
Remove the seeds from the tomato and chop into small cubes.
Cut slices of panela cheese and sauté in a very hot pan. Cut small cubes and let them cool.
Blend the rest of the olive oil with the cilantro, add a little salt and pepper.
To form the kettledrum, use a small hoop and place a layer of tomato and press a little, then a layer of cheese and repeat the same with the cactus.
Add a splash of coriander oil to decorate.
