Cut the onion into julienne very thinly.
Put the onions in a hot pan with the four tablespoons of olive oil, season with pepper and salt. Cover and cook on very low heat for 20 minutes, occasionally uncover and move the onions. The onions will release a liquid, once this happens uncover and let it evaporate. Leave the onions cooking until they become soft.
Add honey and cook for other minutes. Add the bay leaf and the red wine and cook until it becomes like a kind of honey, more or less for an hour. Move occasionally.
Add the balsamic vinegar and let it come back to the consistency as a kind of honey. Try and add salt, pepper if you think it's necessary. Raise the heat a little and stir constantly until the onions become shiny and have a smooth consistency.
