Fabada is the traditional stew of Asturian cuisine made with white beans, chorizo and a mixture of loin and blood sausage. It is served as a main course in food as it can get a bit heavy.

Ingredients

8 portions
  • 2 serrano ham bones
  • paprikas
  • 3/4 kilos pork loin
  • 1/4 kilos pork loin
  • 1 slice bacon, cut into squares
  • 1 slice cured ham, 2 cm thick diced
  • 2 rice blood sausage
  • 3 spanish chorizo
  • 2 cloves garlic
  • 1 onion, big
  • 3 tomatoes, large
  • 3/4 white beans

Preparation

A day before, put the beans to soak in water. The next day, drain and cook in a pressure cooker without salt.
Fry the onion in olive oil and add the grated garlic, the roasted, peeled and minced tomato. Cook until the flavors are incorporated.
In a different pot, fry the meats in pieces in a little olive oil. Add the chorizo, the sliced black pudding, the bacon and the serrano ham. Cook for 5 minutes and add to the tomato and onion mixture.
Add the beans and ham bones to the pot and season with salt and pepper. Let it cook for 20 minutes over low heat and let it thicken. Serve hot.

PRESENTATION

Serve in a clay pot like the one in the photo.

TIPS

You can add a little ground pasilla chili if you wish.

Riquísima receta donde le podemos poner además del chorizo, del lomo y tocino cualquier otro embutido de nuestra elección como el jamón Serrano y la salchicha polaca y por supuesto su buena ración de pimentón o paprika. 😘

Excelente receta! Yo le hice algunas modificaciones como agregar salchicha polaca y chuleta de cerdo ahumada con hueso ademas de un pcoo de paprika para dar color y sabor y el tomate lo licue. A la familia le gusto mucho!

Muy buena ,les platico yo le agrego salchicha de res, garbanzo,chile ancho y chile pasilla,chile guajillo,chuleta ahumada.pero esto es por gustos y créanme nunca han probado tal manjar
