Ingredients

5 portions
  • 1/4 sticks butter
  • 1 kilo beets, peeled
  • 1 onion, chopped
  • 1 potato, peeled and chopped
  • 6 cups chicken consommé
  • 1 1/2 tablespoons fresh ginger, minced
  • 1/4 cups whipping cream

Preparation

Melt the butter, add the beet, onion and potato. Skip as 10 minutes.
Add the consome and ginger, cover and let cook over low heat until the vegetables are soft.
Grind the vegetables in the blender until pure. Spice with salt and pepper.
Serve with sour cream and minced parsley.
