This soup is one of my favorites, it's a rich spinach soup where you first have to prepare a spinach omelette. It is very rich and nutritious.

Preparation
Blend the tomato, onion and garlic with a little chicken broth. Strain the preparation over the rest of the chicken stock and put over medium heat.
While beating the eggs, heat oil in a pan, serve the onion, acitrona, add the spinach. Stir very well. Add the egg, move a little and let it cook well without beating. Turn it around.
Take out the spinach omelette and cut into small cubes. Add on the broth that you cooked. Serves hot
