Chilaquiles are one of those dishes that you can serve on different occasions: for a family breakfast, to cure a hangover, for a brunch with friends, and more. The best part about this dish is that it is easy to prepare, you don’t have to spend a fortune, and it is also very versatile.
It should be noted that in the world of chilaquiles, there are many options: green salsa, red, mole, with habanero, and more. As for proteins, you can add egg, chicken, cecina, tasajo, chorizo, and more. For decoration, you can use fresh cheese, panela, or Oaxaca cheese.
But what’s interesting about chilaquiles is that, despite their popularity in Mexico and abroad, they are a relatively recent creation. According to the information shared by
Google, the first chilaquiles recipe was published on May 23, 1962. It’s an ideal recipe to make use of the ingredients you have in the refrigerator!
It is said that the word chilaquil comes from the Nahuatl
chilli, chile, and
aquilli, which means immersed in. And when it comes to chilaquiles, diners are divided into 2 camps: those who prefer them crunchy and those who like them soaked. How do you like them?

In addition to the fact that chilaquiles look delicious in the
Google Doodle, it is worth mentioning that it was created by
Chava Oropesa, an artist residing in Oakland, California, but of Mexican origin.
The artist shared that he was inspired by his family memories to create this Doodle. For example, he mentions that every year, his aunt brought chilaquiles to the New Year's dinner. He also emphasizes the flavor of the
green salsa his mom makes and the simple ingredients she uses.
Regarding the creative process, he said he chose the pink color because it seems very Mexican to him and from the beginning, he wanted to use a Talavera plate. He also explained that the most fun part was cutting the tortillas and frying them.
