How to make the most of New Year’s leftovers for your meals of the week

In Mexico, both Christmas and New Year's are grand celebrations, where families come together to celebrate big and enjoy turkey, loin, leg, romeritos, cod, apple salad, punch, and more. However, the feast doesn’t end there, as the next day everyone looks forward to the reheated meal.  

We all love reheated meals for various reasons: the flavors of the dishes are enhanced and even better, there’s no need to cook, the kitchen stays cleaner, and more. But at Kiwilimon, we know that sometimes it’s impossible to keep eating the same thing for several days in a row, so we give you ideas to make the most of your New Year's leftovers and reuse them for meals throughout the week. 1. Divide into portions 
The first thing you should do is divide everything into portions, as it will be much easier to store in the refrigerator or freezer. Additionally, once the reheated meal is divided into portions, it will be much easier to share among the family so everyone can enjoy.  

2. Freeze the leftovers 
Once you have portions for two or three days, store the rest in the freezer, as this will help you avoid food waste and will save you if you don't have time to cook the following week.  

3. Opt for easy dishes 
The simplest way to make the most of leftovers and the reheated meals from Christmas or New Year's is to prepare simple, practical, and economical dishes, such as quesadillas, golden tacos, tortas, sandwiches, sopes, stews, and more.  

4. Give a twist to traditional dishes 
Another great way to make the most of leftovers is by preparing traditional dishes and simply substituting the protein. For example, if you're going to make chicken in tomato sauce, you can substitute with turkey. In the case of beef tips in sauce with nopal cactus, you can use loin or leg.  

5. Check your pantry and get inspired 
Before throwing away leftovers because you've been eating the same thing for too many days, check your pantry and let your imagination run wild. You can prepare pasta, lasagna, stews, Mexican snacks, stews, empanadas, tacos, and more.
