Papadzules are a snack consisting of small corn tortillas soaked in a sauce made with pumpkin seeds, filled with chopped boiled egg, rolled like tacos, and drenched in more pumpkin seed sauce and a bit of tomato sauce; as in every dish in Mexico, you can add some ingredient or make a slight modification to the dish.
Serve the papadzules with the pumpkin seed sauce, the red sauce; decorate with hard-boiled egg, roasted habanero chili, whole pumpkin seeds, and epazote.
Tips
Once the pumpkin seed sauce is ready, you can blend it more if you prefer a smoother texture

Hola, yo soy de yucatan y los papadzules no se hacen de esta manera pues las tortillas no se pasan por aceite, solo se remojan en la salsa de la pepita, se rellena con huevo y luego se le pone más salsa de pepita y luego la de tomate. Y a la salsa de pepita le falta el color verde característico
