Papadzules are an appetizer that consists of small corn tortillas soaked in a sauce made with pumpkin seed, stuffed with chopped boiled egg, rolled up like tacos and topped with more seed sauce and a little tomato sauce; As in every dish in Mexico, you can add an ingredient or make a slight modification to the dish.

Ingredients

4 portions
  • 4 cups Water, for the epazote water
  • 1 cup epazote, fresh, for epazote water
  • 3 tomatoes, cut in half, for the red sauce
  • 1/4 onions, for the red sauce
  • 1 habanero pepper, for the red sauce
  • 1/2 cups Water, for the red sauce
  • to taste salt, for the red sauce
  • 2 tablespoons vegetal oil, for the red sauce
  • enough Water
  • 5 eggs
  • 1 1/2 cups pumpkin pip
  • 1 teaspoon salt
  • enough tortilla, run through oil
  • enough egg, hard, to decorate
  • enough epazote, to decorate
  • enough pumpkin pip, to decorate

Preparation

For the epazote water, boil the water and the epazote for 3 min, remove from the heat and let it cool with the epazote inside. Reservation.
Roast the tomato, onion and habanero pepper until it turns dark, remove and reserve the pepper to decorate.
Grind the tomato and onion with water and salt; apart heat a frying pan over medium heat and add oil; then add the tomato sauce and fry for 3 minutes until it changes color and reduces a little. Reservation.
With the help of a processor, grind the pumpkin seed, salt and epazote water to form a paste. Reservation.
Cook the seed paste with more epazote water in a pan over medium heat, thicken for 5 minutes and remove.
Form the papadzules with the tortillas previously passed through oil and with the chopped hard-boiled egg.
Serve the papadzules with the pepita sauce, the red sauce; Garnish with hard-boiled egg, tatemado habanero pepper, whole pumpkin seed and epazote.

TIPS

Once the pepita sauce is ready, you can grind it further if you prefer a smoother texture.
