Ingredients: 3 kilos skirt steak; 1 bottle red wine, (preferably tempranillo); 2 tablespoons coarse salt; 1 tablespoon pepper; 7 tablespoons vegetable oil; 8 cloves garlic; 6 shallots, finely chopped; 2 carrots, peeled and cut into cubes; 2 sprigs celery, cut into cubes; 1 cup dried apricots, dark; 1 bunch fresh parsley; 2 sprigs fresh thyme; 2 tablespoons tomato purée; 3 cups beef broth; 1 cup green onion; 1/4 cups flour

Preparation

Season the brisket with salt and pepper on both sides, cover, and refrigerate for half an hour. Meanwhile, bring the wine to a boil in a pot over medium heat until it reduces by half, about 15 minutes.
