Ingredients

  • 120 grams of nut
  • 150 grams of self-raising flour
  • 150 grams of Xylitol
  • 2 pieces of egg organic
  • 140 milliliters of oil
  • 180 grams of carrot grated
  • 100 grams of raisin golden
  • 1 teaspoonful of baking soda
  • 2 teaspoons of ground cinnamon

    Preparation

    Preheat the oven to 180 ° C. Grease and cover with waxed paper to bake a deep and round mold of 18cm.
    Chop the nuts roughly on a board.
    Mix the flour, cinnamon, baking soda, xylitol and nuts in a large bowl.
    Beat the eggs and oil in another bowl. Add the flour mixture and stir until integrated. Incorporate carrots and raisins.
    Bake 50-60 minutes, until golden brown and when inserting a wooden stick in the center it comes out clean. Check after 40 minutes and if the cake is forming too much, cover it loosely with aluminum foil.
    Let the cake cool in the mold for 10 minutes, unmold over a wire rack. Serve hot or at room temperature.

    TIPS

    Do not unmold the cake until after 10 minutes because if you do it when it is hot it could break.
