Preheat the oven to 170° C. Place the cookies with the butter in the processor and process until you obtain a dough. Pour the cookie mixture into a 25 cm diameter cake mold, pressing down to form a base, and refrigerate. In a mixer, place the cream cheese, add the whipping cream, sugar, the eggs one by one, vanilla, and flour until perfectly incorporated. Pour the batter into your mold, place the cookies on top, and cover with aluminum foil. Bake in a water bath for 45 minutes or until golden on top. Remove the cheesecake from the oven, cool, and refrigerate for about two hours. Unmold, cut, and enjoy.
