This cold cheesecake has the perfect mix of flavors and thanks to your Braun® MultiQuick 725 with its many functions you will have the ideal texture in your dessert. Cajeta is a dulce de leche caramel that is very popular in Mexico. It has a thick consistency and a light brown color. There are variants in the flavor of the same as in some states of the Republic is added vanilla, cinnamon or rum. It is a very versatile ingredient for desserts since you can combine it with many ingredients obtaining incredible results. Ingredients

12 portions
  • 2 cups cinnamon cookie, for the crust
  • 1 cup walnut, for the crust
  • 3/4 cups butter, melted, for thecrust
  • 4 packages cream cheese, (190g each) for the cheesecake
  • 1 cup whipping cream, for the cheesecake
  • 2 1/2 cups cajeta envinada, for the cheesecake
  • 3 envelopes gelatin, (7g each) for the cheesecake, hydrated and melted
  • to taste cajeta - Mexican carmelized goat milk sweet , to decorate
  • to taste walnut, chopped, to decorate

Preparation

Use your Braun® MultiQuick 725 processor to process cookies and nuts finely. Mix with melted butter.
Pour into a cake mold 23 cm (9 inches) in diameter and compact the crust with a spoon. Set aside.
Use the "bell" accessory of your Braun® MultiQuick 725 mix the cheese, cream with the whipping cream and the cajeta and continue mixing until you obtain a homogeneous mixture.
Add the unflavored gelatin in a slow stream, pour over the cookie crust and let cool for 3 hours or until set. Remove from mold.
Decorate with cajeta and nuts.

PRESENTATION

On a cake stand or platter, decorated with cajeta and nuts.

TIPS

Thanks to the Braun® MultiQuick 725 hood it is very easy to undo any lump and obtain a very smooth mixture.
