Ingredients

  • 125 grams White chocolate
  • 225 grams flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 125 grams unsalted butter, softened
  • 100 grams sugar
  • 3 eggs, separated the whites of the yolks
  • 125 milliliters milk
  • 300 grams pear, in syrup slices or any other fruit in syrup you want
  • 125 grams butter, coverage
  • 125 grams dark chocolate, coverage

Preparation

Preheat the oven to 170 ° C. Grease with butter and flour a 23 cm thread mold. Melt the chocolate in a bain-marie. Apart to cool. In a medium bowl, mix the flour, baking powder and salt.
In a large bowl, whisk the butter and sugar with an electric mixer , at medium speed until creamy. Add the yolks, one at a time beating well after each addition; Add the chocolate gradually and the dry ingredients, alternating with the milk.
With the blender in high speed, beat the egg whites until they form firm peaks. Mix them in an enveloping form with the paste. Pour half of the mixture into the prepared mold. Place the sliced ​​pears or any other fruit on top, and pour the rest of the pasta over the pears. Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes. Unmold and put on a cooling rack.
For coverage: Melt butter and chocolate in a bain-marie in almost boiling water. When it's soft and shiny, set aside to cool. Brush over the top and sides of the cake.
