Preparation
Preheat the oven to 170ºC.
A mold of approx. 30 cm in diameter, cut a circle the size of the bottom of it and also greased.
Mix the almonds with the flour and baking powder and move away. Beat the whites with the cream of tartar until soft peaks form, the sugar is added little by little, without stopping to beat until hard and bright peaks form, the yolks are added one by one.
The mixture of the almond is carefully incorporated and finally the cognac. This mixture is poured into the mold and baked for approximately 40 minutes or until it is cooked and golden brown.
It is removed, placed on a grid. Let it rest for five minutes, remove it from the mold and allow it to cool completely. Place on a platter and sprinkle with icing sugar.
