I love this recipe for coconut and pineapple tamales, because you come out of the typical sweet tamales and they are delicious.

Ingredients

  • 1 can of Pineapple in syrup cut into pieces (stuffed)
  • 150 grams of grated coconut (filling)
  • 300 grams of Butter (dough)
  • 500 grams of nixtamal flour (dough)
  • 1/2 Cup of cinnamon infusion (dough)
  • 1/2 Cup of Water (dough)
  • 1 tablespoon of baking powder (dough)
  • to taste of sugar (dough)
  • 1 package of corn leaf for soaked tamal

    Preparation

Mix the pineapple with the coconut in a bowl. Reservation.
In a blender, serve the butter and beat until it sponges. When it is white, add the flour and beat a little more. Add the infusion of cinnamon, the rest of the flour and water little by little while continuing to beat.
Integrate the baking powder and sugar, whisk until they are completely mixed.
Distribute carefully, dough on the leaves, help with the back of the spoon to spread the dough and put a little filling on the center.
Fold each end of the blade inward and finally bend the tip.
In a steamer set tamal leaves in the bottom and place the tamales you made inside. Leave them inside for about an hour and a half or check the tamales until the leaf comes off easily.

    TIPS

You can chop pineapple well if you do not like large pieces.
