Carrot Cupcakes with Bitumen

Delicious carrot cupcakes with walnut and cream cheese bitumen!

Ingredients

12 portions
  • 1 1/3 cups flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon cinnamon powder
  • 1/2 cups walnut, chopped
  • 2 eggs
  • 2/3 cups sugar
  • 2/3 cups vegetal oil
  • 1/2 teaspoons vanilla extract, pure
  • 2/3 cups Apple sauce, sugarfree
  • 1 1/3 cups carrot, grated
  • 1 stick butter, at room temperature (for bitumen)
  • 1 stick cream cheese, at room temperature (for bitumen)
  • 2 cups powdered sugar, (for bitumen)
  • 1 teaspoon vanilla extract, (for bitumen)

Preparation

In a bowl add the flour, baking soda, salt, cinnamon and nuts.
In another bowl add the eggs with the sugar, oil and vanilla extract. Add the applesauce and the grated carrots and mix.
Add the liquid mixture to the bowl with flour and incorporate all the ingredients until they are perfectly smooth without lumps.
Preheat the oven to 180 °, in a tray for 12 cupcakes place waxed paper for cupcakes, slowly pour the mixture into each mold without reaching the top.
Bake 20 to 23 minutes or until you insert a toothpick in the center and it comes out dry. Remove from the oven and let cool before decorating with the bitumen.
To make the bitumen: mix the butter with the cream cheese, add perfectly, add the vanilla extract and add the icing sugar little by little and beat until you achieve the desired consistency.
Decorate the cupcakes with a duya or a plastic bag with a small hole, if you want you can sprinkle a little nut on the bitumen once placed and enjoy!
