This recipe for piloncillo and chocolate pig cookies is very Mexican and perfect to make with children. Ingredients

  • 300 grams of piloncillo for the piloncillo syrup
  • 1 cinnamon for the piloncillo syrup
  • 1 star anise for the piloncillo syrup
  • 1 cup of Water for the piloncillo syrup
  • 4 cups of flour
  • 2 1/2 teaspoons of Rexal® Baking Powder
  • 1 teaspoon of salt
  • 1/2 cup of butter
  • 1 egg
  • 1/2 cup of milk at room temperature
  • 1 egg beaten, to varnish
  • enough of bitter chocolate melted, to decorate

Preparation

Preheat the oven to 180 °C.
For the syrup, in a pot heat the piloncillo brown sugar with cinnamon, anise and water, and cook over low heat until you have a syrup a little thick. Let cool and reserve.
In a bowl, add flour, REXAL® baking powder, salt, butter and brown sugar syrup. Knead until it is completely integrated and add the egg and milk. Continue kneading until you have a smooth and homogeneous dough. Let stand for 20 minutes in the refrigerator.
On a floured surface, spread the dough to a thickness of 1 cm. With a pig cookie cutter, cut and place the cookies on a baking sheet.
Varnish the cookies with egg and bake for 20 minutes or until browned. Remove and cool.
Cover the surface of the cookies with melted chocolate, let dry and enjoy with a glass of cold milk.

PRESENTATION

On a basket, served with a glass of milk.

TIPS

It is important that when making the syrup don't stop stirring it so that it doesn't stick and make the pigs taste bitter. Don't add the syrup hot, otherwise you it will affect the consistency of the dough.
