Meringue Lemon Pie

This type of lemon pie is filled with a creamy lemon pudding and decorated with meringue, delicious and refreshing!

Ingredients

10 portions
  • pie crust dough
  • 1/2 cups sugar
  • 1 tablespoon lemon zest
  • 6 tablespoons butter
  • 6 egg yolks
  • 3/4 cups egg white
  • 1 cup sugar
  • 1/2 cups lemon juice

Preparation

Pre-cook the dough for the pie crust at 350 F (190 C), perforating the center with a fork, placing waxed paper on top and filling with beans (to keep its shape). Cook for 25 minutes, remove beans and waxed paper and let cool.
Mix the sugar, lemon juice, lemon zest and butter in a pan and bring it to a boil, stirring with a wooden spoon. Remove the lemon zest (by straining the mixture). Beat the egg yolks with a balloon whisk until they are liquid. Add 1/4 of the yolk mixture to the lemon mixture. Return the mixture to the pan and wait for it to boil. Add the rest of the yolks with a balloon whisk. Continue to whisk constantly with the balloon whisk until the mixture thickens and is about to boil. Put the lemon filling in a container and cover with plastic touching directly the mixture (to avoid a cream is formed on top). Refrigerate and reserve.
Pour the lemon mixture on the previously baked pie crust. Set aside.
To prepare the meringue, beat the egg whites with the sugar until stiff. Spread half the meringue on the pie. Put the rest of the meringue in a pastry bag and make "peaks" on the meringue, to decorate the pie.
Cook the pie at 450 F (230 °C) to brown the top of the meringue.
