If you love the taste of prepared beer, you will really enjoy this gelatin ideal to surprise your friends, as a party dessert or simply to prepare something different at home. Try it with mango pieces and accompany it with enchilada gummies.

Ingredients

8 portions
  • 1 mango, for the base gelatin
  • 3/4 cups tamarind pulp, for the michelada sauce
  • 1/4 cups lime juice, without seeds, for the michelada sauce
  • 1 cup sugar, for the michelada sauce
  • 1 1/2 cups clam juice, for the michelada sauce
  • 1/4 cups worcestershire sauce, for the michelada sauce
  • 2 tablespoons liquid seasoning, for the michelada sauce
  • 1/2 cups Salsa Huichol® traditional sauce, for the michelada sauce haha
  • 1 cup lager beer, or pilsner, for the base gelatin
  • 1/4 cups sugar, for the base gelatin
  • 21 grams gelatin, hydrated and diluted (3 sachets, 7 g each), for the base gelatin
  • 4 cups lager beer, or pilsner, for the prepared sauce
  • 56 grams gelatin, hydrated and diluted (8 sachets, 7 g each), for the prepared sauce
  • chilli powder, to decorate
  • mango, cubed, to decorate
  • chili gummy, and sugar, to decorate
  • Salsa Huichol® traditional sauce, To accompany

Preparation

For the mango. Slice one side of the handle vertically by sticking the knife very close to the bone. Hold the slice and with the tip of the knife, cut horizontal lines reaching almost to the skin, repeat vertically to form a grid. Remove the squares with the help of the same knife. Reserve until use.
For the michelada sauce. Blend the tamarind pulp together with the lemon juice, sugar, clam juice, Worcestershire sauce, seasoning juice and the Traditional Huichol® Sauce until completely integrated. Reserve until use.
Prepare the base gelatin. In a bowl mix the clear beer together with the sugar and the diluted gelatin, incorporate gently with the help of a balloon whisk, you will notice how a foam will begin to form, remove with the help of a spoon or strainer until removing as much as possible. With the help of a measuring cup or ladle, pour the mixture into a greased gelatin mold 25 cm in diameter, place the mango cubes that you reserved and refrigerate until set.
Prepare the gelatin with prepared sauce. Pour the michelada sauce into a bowl along with the light beer and the diluted gelatin; Mix gently with the help of a balloon whisk, you will notice how a foam will begin to form, remove with the help of a spoon or strainer until you eliminate as much as possible.

Once the beer base with mago is curdled, pour the prepared beer gelatin, with the help of a measuring cup or ladle until the mold is filled, refrigerate until set.
Unmold the gelatin, decorate with the chili powder, the mango cubes, the enchilada gummies and sugar. Pour in the Traditional Huichol® Sauce to taste and serve with lemon.

PRESENTATION

Place on a plate and decorate with chili powder, mango, enchilada gummies and sugar gummies. Pour a little Huichol® Traditional Sauce around and accompany with lemon.

TIPS

If when pouring the diluted gelatin, lumps form on the surface, remove, dilute again in the microwave and pour again into the gelatin.
