Ingredients

10 servings
  • 1 1/2 cups of Unsalted Margarine Light Iberia® Spread
  • 1/2 Cup of sugar
  • 4 eggs
  • 1 Cup of Greek natural yogurt
  • 1/2 teaspoonful of baking powder
  • 1 teaspoonful of vanilla
  • 1 3/4 cups of wheat flours
  • 1 Cup of grated coconut toasted and chopped
  • 1 1/2 cups of jocoque natural, to decorate
  • 3 spoonfuls of powder sugar to decorate
  • 2 spoonfuls of grated coconut and toasted, to decorate

Preparation

Beat Light Iberia® Margarine Spread with salt without sugar until creamy. Add the eggs one by one and continue beating until integrated.
Add the yogurt, baking powder and vanilla. Beat until incorporate.
Mix the flour with the coconut and add to the previous mixture; Beat until there are no lumps.
Preheat the oven to 180 ° C, pour the mixture into a previously greased screw mold and bake for 60 minutes or until a toothpick comes in, come out clean. Let cool and unmold.
For the bitumen, beat the jocoque with the icing sugar. Once the thread is cold, decorate it with the bitumen, sprinkle the grated coconut and serve.

TIPS

You can substitute half of the flour for wholemeal flour.
