Ingredients

20 portions
  • 150 grams bittersweet chocolate
  • 250 grams Water
  • 250 grams sugar
  • 2 oranges, thick skin

Preparation

Cut the oranges in half and remove the fruit inside (leave only the peels).
Cut each half orange in 8 strips of approximately 1cm each.
Put the oranges in a pot with cold, hot water over high heat until the water boils. Repeat this process 3 times or until the oranges are translucent.
In medium saucepan over medium heat mix water and sugar. Add the orange strips and cook until the water has turned into a syrup (approximately 20 minutes).
Remove the oranges and dry on a grill for at least 24 hours. Put the grate on a tray with waxed paper to avoid dirtying.
In a saucepan in a bain-marie melt the semi-bitter chocolate.
Take each orange strip and dip half in the chocolate. Place the strips on waxed paper and allow them to dry at room temperature.

PRESENTATION

Serve on a silver tray or glass platter.

TIPS

The strips of orange with chocolate can be refrigerated for up to 2 weeks. Store them in a glass container with waxed paper.
